Dine Without Whine
is the perfect tool to help your family enjoy stress free and nutritious
family dinners.
This Week's Recipes:
Main Dish Recipe
Lemonade Chicken
Makes 6 servings
PREP: Start the NIGHT BEFORE, Thaw Lemonade
1 12-ounce can frozen lemonade concentrate thawed
2 tablespoons brown sugar
2 tablespoons soy sauce
1 teaspoon garlic powder
1 teaspoon chopped mint leaves fresh or dried
6 boneless skinless chicken breast halves
1. In a large resealable bag, combine the first five ingredients. Remove
half of the contents to a small bowl; cover and refrigerate for basting
later.
2. Add chicken to the bag, seal and turn to coat. Refrigerate overnight,
turning occasionally if you get a chance.
3. Drain and discard marinade from chicken. Grill, covered, over medium
heat for 15 minutes, turning occasionally. Baste with reserved marinade.
Grill 5-10 minutes longer or until juices run clear, basting and turning
several times.
Serve with (A*) White Rice (make an extra 6 cups for the recipe tomorrow
night), steamed broccoli
Weekend Brunch Idea
Omelet Biscuit Cups
Makes 5 servings
1 12-ounce tube large buttermilk refrigerator biscuits
4 eggs
1/4 cup milk
1/8 teaspoon pepper
1/8 teaspoon salt
1 cup fully cooked ham diced
3/4 cup shredded cheddar cheese divided
1 4-ounce can chopped mushrooms
1 tablespoon butter
1. Press biscuits onto the bottom and up the sides of greased muffin cups,
set aside.
2. In a large bowl, beat the eggs, milk, salt and pepper. Add ham, 1/4 C.
Cheese and mushrooms, mix well.
3. In a skillet, melt the butter, add the egg mixture. Cook and stir until
eggs are nearly set. Spoon into biscuit cups.
4. Bake at 375 degrees for 10-15 minutes or until biscuits are golden
brown. Sprinkle with the remaining cheese. Bake 2 minutes longer or until
cheese is melted.

Recipes will be fairly simple and family friendly - meaning hopefully your
children (or picky husband) will enjoy them as well; and they will include
ingredients that you have actually heard of. (You won't have to search all
over town for that special ingredient!)
