Dine Without Whine
is the perfect tool to help your family enjoy stress free and nutritious
This Week's Recipes:
Main Dish Recipe
Baked Potato Soup
Makes 4 servings
Prep; Bake Potatoes - I just stab mine with a fork a few times and
throw them in the microwave until they are soft - approx. 10-15 minutes
3 strips bacon diced
1 small onion chopped
1 clove garlic minced
3 tablespoons flour
1 teaspoon salt
1 teaspoon basil
1/2 teaspoon pepper
3 cups chicken broth
2 large potatoes baked, peeled and cubed (approx 2 cups)
1 cup half and half
1/2 teaspoon hot pepper sauce
1 cup shredded cheddar cheese
Minced fresh parsley optional
1. In a large saucepan, cook bacon until crisp. Drain, reserving 1
tablespoon drippings. Set bacon aside.
2. Sauté onion and garlic in the drippings until tender.
3. Stir in flour, salt, basil and pepper; mix well.
4. Gradually add broth. Bring to a boil; boil and stir for 2 minutes.
5. Add the potatoes, cream and pepper sauce; heat through but do not boil.
6. Garnish with bacon, cheese and parsley.
Serve with Dinner Rolls

over town for that special ingredient!)
