Christine Steendahl's Dine Without Whine is the perfect tool to help your family enjoy stress free and nutritious family dinners.


This Week's Recipes:

Weekend Brunch Idea
Omelet Biscuit Cups

Makes 5 servings

1 12-ounce tube large buttermilk refrigerator biscuits
4 eggs
1/4 cup milk
1/8 teaspoon pepper
1/8 teaspoon salt
1 cup fully cooked ham diced
3/4 cup shredded cheddar cheese divided
1 4-ounce can chopped mushrooms
1 tablespoon butter

1. Press biscuits onto the bottom and up the sides of greased muffin cups, set aside.
2. In a large bowl, beat the eggs, milk, salt and pepper. Add ham, 1/4 C. Cheese and mushrooms, mix well.
3. In a skillet, melt the butter, add the egg mixture. Cook and stir until eggs are nearly set. Spoon into biscuit cups.
4. Bake at 375 degrees for 10-15 minutes or until biscuits are golden brown. Sprinkle with the remaining cheese. Bake 2 minutes longer or until cheese is melted.
