Dine Without Whine
is the perfect tool to help your family enjoy stress free and nutritious
This Week's Recipes:
Makes 4 servings
1 cup sliced mushrooms
1/4 cup chopped onions
1 cup egg substitute
1/4 cup fresh tomatoes
4 flour tortillas (10")
8 slices ham
1/2 cup shredded mozzarella cheese
1/2 cup cheddar cheese
1/2 cup salsa
1. In a small nonstick skillet coated with cooking spray, sauté
mushrooms and onion until tender.
2. Add egg substitute and tomato; cook and gently stir over medium
heat until egg mixture is completely set.
3. Place one tortilla in a large ungreased nonstick skillet; top
with ham, egg mixture, cheese and remaining tortilla.
4. Cook over medium heat, carefully turning once, until lightly
browned on both sides and cheese begins to melt. Cut into wedges and
serve with salsa.
