Halloween Recipes:

Spooky Batwitches

These are Ice Cream Sandwiches, or, you can just decorate the baked cookie instead.

What you'll need:
1 package (18oz) refrigerated cookie dough
1/2 c. unsweetened cocoa powder
2 tablespoons all-purpose flour
1/2 gallon vanilla ice cream, slightly softenend
Orange and Black nonpareils

1. Preheat oven to 350 degrees. Knead cocoa powder into the dough; knead flour into the dough.
2. Roll dough to a 1/4 in. thickness. Using a bat template, cut out bat shapes. (Draw or use a bat pattern to guide you.) Insert a drinking straw at the top of the bat shapes for the eyes. Place cutouts on ungreased baking sheets. Bake until firm, 12-15 minutes; let cool completely.
3. Line a 15x11 inch baking sheet with foil. Using a small offset spatula and working quickly, apply about 1/3 cup softened ice cream to half the cookies. Quickly place remaining cookies, flat side down, onto ice-cream topped cookies.
4. Place batwitches on prepared baking sheet and cover pan loosely with plastic wrap. Freeze until firm, about 1 hr.
5. Roll the edges of the frozen batwitches in orange and black nonpareils, gently pressing so they adhere. Shake off excess. Servce immediately or wrap securely in plastic wrap and return to freezer.

** You can omit the ice cream and just decorate the baked cookies... maybe melted dark chocolate to outline the wings, melted white chocolate to make bat fangs.

Bobbing For Apples Bread

Preheat oven to 350°

In a large bowl, sift together:
2 cups sifted flour
1 ½ tsp. cinnamon
1 tsp. baking soda
½ tsp. salt
2 cups sugar

In a second bowl, mix:
1 Tbsp. lemon juice
2 large eggs
¾ cup vegetable oil

Fold the wet ingredients into the dry ingredients and add:
4 cups apples, peeled and diced
1 cup chopped walnuts (optional)

Grease and flour a 13" x 9" pan, add the batter, and bake 45 minutes to 1 hour.

Halloween Pumpkin Bread

Serve this recipe with warm caramel sauce and a dollop of vanilla ice cream. Yummy!

Ingredients

1/1/4 cups all-purpose flour
1/2 cup whole wheat flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1 teaspoon nutmeg
1 1/2 cups sugar
2 eggs
1/2 cup (1 stick) melted butter
1 cup unsweetened pumpkin puree
1/3 cup water
1 ½ teaspoons vanilla
1 cup mini chocolate chips

Directions

1. Preheat oven to 350°.

2. In a large mixing bowl, combine the all-purpose flour, wheat flour, salt, baking soda, cinnamon, and nutmeg. Set aside.

3. In a separate bowl, beat the eggs. Add the sugar and beat until light and fluffy.

4. Add the melted butter, pumpkin puree, water, and vanilla. Mix well.

5. Add the dry ingredients and stir until blended.

6. Add the chocolate chips.

7. Pour into floured and greased loaf pans.

8. For mini loaf pans, bake 35-40 minutes.
For a standard sized loaf pan, bake 45-60 minutes, until a toothpick inserted into the center comes out clean.

Serve warm with caramel sauce.

Yields 12 servings.
