St. Patrick's Day

 

St. Patrick - Patron of Ireland

In my family, St. Patrick's Day is HUGE!  My father is named Patrick, as is his namesake, my younger brother Patrick.  My sister Brady was born on, you guessed it...St. Patrick's Day!  And to make it all even more perfect, (on March 17) Brady gave birth to her first son...yes, on her birthday!  His name? You guessed it!  Patrick!!!  The latest addition to our family, Patrick III recently arrived on the scene, named after his daddy and grandpa.  Every year our family looks forward to celebrating Irish style!  We are happy to share the following resources and invite your contributions via email to [email protected].

Cooking Fun:

Project: A Magic Fairy Box

Leprechauns are tiny make-believe fairies from Ireland who, according to legend, have a hidden pot of gold. If caught, a leprechaun can be forced to reveal his treasure, but the captor must keep their eyes on him always. If your eyes leave the leprechaun he will vanish and all hopes of finding his treasure are lost.  

Capture your own fairy with a little, magic fairy box.  A small matchbox is the perfect resting place for a fairy. Line it with something comfortable like moss or grass.

Paint your matchbox green and then cover the outside of with flower petals and leaves. We simply attached our petals using double sided tape.

Leave your box partially open and wait for a fairy to come rest. If you're lucky, you may even find some gold. (Mom or dad can help here. My children often found pennies or gold coins tucked in their box the next morning.)

Recipe: Irish Scones

Ingredients

4 cups flour
1/2 cup butter
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup sugar
1 egg
1 cup milk
1 cup white raisins, optional

Directions

1. Preheat oven to 425.
2. In a large bowl, combine butter and flour with a pastry blender or mix with your fingers until crumbly.
3. Add baking powder, salt and sugar.
4. In a separate bowl, beat together the egg and milk. Mix into dry ingredients.
5. Turn onto floured surface and pat carefully with hands into a one-inch thickness.
6. With a cookie cutter or the bottom of a drinking glass, cut dough into 2 inch rounds. Place on a greased cookie sheet, about one inch apart and bake for 15 minutes.

Yields 18 scones.
