Mix oats and milk in large bowl; let stand 5 minutes. Add remaining ingredients except Strawberry Sauce. Beat mixture on medium speed until well blended. 2. Heat griddle or skillet over medium heat or to 375°. Grease heated griddle, if necessary. To test griddle, sprinkle with a few drops of water. If bubbles jump around, heat is just right. For each pancake, pour 3 tablespoons batter onto hot griddle. Cook pancakes until puffed and dry around edges. Turn and cook other side until golden brown. Serve with warm Strawberry Sauce. For Strawberry Sauce 1. Drain strawberries; reserve liquid. Combine liquid and cornstarch in small saucepan. Cook over medium heat about 1 minute or until mixture boils. Stir in strawberries; cook 1 minute. Preheat oven to 375°. Lightly grease baking sheets. 2. In a medium bowl, stir flour, cocoa powder, baking powder, baking soda and salt; set aside. 3. In a large mixer bowl at medium speed, beat sugar and butter until creamy. Add sour cream, egg and vanilla; beat until well blended. At low speed, beat in flour mixture until blended and no streaks remain. Drop about 1/2 tablespoon of dough about 2 inches apart on baking sheets. 4. Bake for 8 to 9 minutes or until edges are set and tops are soft-set. Cool on baking sheets for 1 minute, and then make "sandwiches" by placing one mint patty between two cookies. Place on a flat surface. When mint patty melts slightly, gently press together. Transfer cookies to wire racks to cool completely. ***Find more great family recipes and meal planning assistance at [Dine Without Whine](http://www.dinewithoutwhine.com/amember/go.php?r=1957&i=b16).*** ### Share this article [![Share on Facebook](https://static.hubspot.com/final/img/common/icons/social/facebook-24x24.png)](http://www.facebook.com/share.php?u=https%3A%2F%2Fwww.catholicmom.com%2Farticles%2F2009%2F02%2F20%2Foatmeal-pancakes-with-strawberry-sauce-and-mint-lovers-surprise%3Futm_medium%3Dsocial%26utm_source%3Dfacebook) [![Share on Twitter](https://static.hubspot.com/final/img/common/icons/social/twitter-24x24.png)](https://twitter.com/intent/tweet?original_referer=https%3A%2F%2Fwww.catholicmom.com%2Farticles%2F2009%2F02%2F20%2Foatmeal-pancakes-with-strawberry-sauce-and-mint-lovers-surprise%3Futm_medium%3Dsocial%26utm_source%3Dtwitter&url=https%3A%2F%2Fwww.catholicmom.com%2Farticles%2F2009%2F02%2F20%2Foatmeal-pancakes-with-strawberry-sauce-and-mint-lovers-surprise%3Futm_medium%3Dsocial%26utm_source%3Dtwitter&source=tweetbutton&text=Oatmeal%20Pancakes%20with%20Strawberry%20Sauce%20and%20Mint%20Lovers%20Surprise) [![Share on Email](https://static.hubspot.com/final/img/common/icons/social/email-24x24.png)](mailto:?subject=Check%20out%20https%3A%2F%2Fwww.catholicmom.com%2Farticles%2F2009%2F02%2F20%2Foatmeal-pancakes-with-strawberry-sauce-and-mint-lovers-surprise%3Futm_medium%3Dsocial%26utm_source%3Demail%20&body=Check%20out%20https%3A%2F%2Fwww.catholicmom.com%2Farticles%2F2009%2F02%2F20%2Foatmeal-pancakes-with-strawberry-sauce-and-mint-lovers-surprise%3Futm_medium%3Dsocial%26utm_source%3Demail) ** #### About the Author ![Guest](https://www.catholicmom.com/hubfs/Profile%203.jpg) ### [Guest](https://www.catholicmom.com/articles/author/guest) We welcome guest contributors who graciously volunteer their writing for our readers.
