Crispy Oven Fried Fish
Makes 4 servings

1 pound fresh or frozen cod filets, orange roughy fillet, or catfish fillet (approx. 1/2"    thick)
1/2 cup milk
1/4 cup flour
1/3 cup dry bread crumbs
1/4 cup grated Parmesan cheese
1/2 teaspoon dill weed
1/8 teaspoon pepper
2 tablespoons butter or margarine

1. Thaw fish if necessary. Cut fish into 4 serving-size pieces. Place milk in a shallow dish. Place flour in
another shallow dish. In a third shallow dish combine bread crumbs, cheese, dill weed, and pepper. Toss
with melted margarine.

2. Dip each piece of fish in the milk, then in the flour. Dip again in the milk, then in the crumb mixture to
coat all sides. Place fish on a greased baking sheet. Bake, uncovered, in a 450 degree oven for 6 to 9
minutes or until fish flakes easily with a fork.


Peanut Butter Mousse Pie
Makes 8 servings

1 6-ounce package semi-sweet chocolate chips
6 tablespoons butter or margarine
3 tablespoons milk
1 graham cracker pie crust ready-made
1 envelope unflavored jello
3/4 cup water cold
1 8-ounce package cream cheese softened
1 cup sugar
1 cup sour cream
2/3 cup creamy peanut butter
2 teaspoons vanilla extract
1 cup frozen whipped topping thawed

1. In a small saucepan over low heat, melt chocolate chips and butter. Remove from heat. Stir in milk. Set
1/4 cup of the mixture aside. Pour remaining mixture into graham cracker crust. Refrigerate.

2. In small saucepan, sprinkle gelatin over water; let stand 1 minute. Stir over low heat until gelatin
dissolves. Remove from heat; set aside.

3. In a large mixer bowl at medium-high speed, beat cream cheese, sugar, sour cream, peanut butter, and
vanilla until fluffy. Gradually beat in gelatin mixture. Place bowl of peanut butter mixture in a larger bowl
which contains cold water and ice. Stir until mixture mounds on a spoon. Remove bowl from ice water.

4. Fold in whipped topping. Mound into chocolate-coated crust, making a swirl in the center. Drizzle with
reserved chocolate mixture. Refrigerate overnight to develop flavor.
