Canning is going through resurgence in popularity.
No wonder in today's economy, we want to stretch our food budget as far as possible. Most would prefer small batch goods. Besides large batch canning can be daunting even for the seasonal canner.
Now that summer is in full swing our mind thinks of the harvest. For many of us who planted gardens, we dream of our first bite. So what do we do with ten pounds of cucumbers, tomatoes and peppers? Make small batches of canned goods. The key is so you don't get burned out, can from different harvest times. You can also can as you go, say five to ten cans a weekend. It seems more realistic and less daunting than a canning marathon.
