Now that we have Thanksgiving behind us, perhaps we are thinking about eating a bit healthier. I know that it is hard, especially this time of year.
It is believed this time of year is when we tend to really put on extra pounds. It is understandably so, with all the parties and merriment going on.
Here is a good snack to stay somewhat healthy as we enter the Christmas Season. I know sometimes it is really hard to be good. This recipe helps me out when I have that salty crunch craving. You don’t need to feel guilty at all about this recipe because it is baked, not fried. If you don’t like it spicy you can cut back on the creole seasoning or not use it at all. This recipe is that versatile.
Spicy Oven Roasted Chickpeas
Ingredients:
- 2 (15 oz) cans chickpeas
- 2 tablespoons olive oil
- 1 tablespoon cider vinegar
- 1 tablespoon creole seasonings
Directions:
Preheat your oven to 400 degrees.
Place the chickpeas in a large bowl and toss with the oil, vinegar and seasonings. Spread chickpeas in a even layer on a rimmed baking sheet. Bake until crisp about 30 minutes.
