Bacon-Burger Skillet Dinner
Makes 4 servings
Ingredients
- 6 slices bacon, halved
- 1 pound ground beef, divided into 4 patties
- Salt and pepper to taste
- 1 onion, sliced
- 6 potatoes, sliced
- 4 carrots, sliced
- 1/2 teaspoon dried parsley
- 1/4 cup water
Instructions
1. Line the bottom of a large skillet with bacon; place beef patties over bacon. Season with salt and pepper. Place onion over patties. Cover onion with potatoes; add carrots. Sprinkle all with parsley.
2. Cook on medium-high heat until bacon sizzles; add water, cover and cook on low heat for 20 to 25 minutes; flip burgers. Cook an additional 20 to 25 minutes, stirring occasionally, or until bacon is crispy and vegetables are tender.
Ambrosia Toss
Makes 6 servings
Ingredients
- 1 16-ounce can fruit cocktail
- 1 orange large
- 1/2 cup coconut flaked
- 1/2 cup mayonnaise
- 3 cups salad greens
- Additional flaked coconut
Instructions
1. Drain fruit cocktail, reserving 2 tablespoons of the syrup. Place fruit cocktail in a medium bowl. Set fruit and syrup aside.
2. Peel orange and cut into bite- size pieces. Add to fruit cocktail. Stir in 1/2 cup coconut until blended. Chill until ready to serve.
3. In a small bowl, mix mayonnaise and 2 tablespoons reserved syrup until blended. Set mayonnaise mixture aside until ready to serve.
4. To serve, place salad greens in a salad bowl. Add well-drained fruit mixture and mayonnaise mixture; toss lightly until all ingredients are lightly coated. Garnish with additional coconut.
