Glazed Pineapple Ham
Makes 5 servings
Ingredients:
- 1 20-ounce can crushed pineapple, undrained
- 1/2 cup brown sugar, packed
- 1 tablespoon lemon juice
- 1 teaspoon dry mustard
- 2 cups diced ham, fully cooked
- 2 cups prepared white rice
- Shredded cheese, optional
Instructions:
In a skillet, combine crushed pineapple and juice, brown sugar, lemon juice, and mustard. Heat until sugar dissolves. Stir in rice and diced ham. Heat through. Sprinkle with cheese if desired.
Cauliflower Hash Browns
Makes 4 servings
Ingredients:
- 1 1/2 cups cauliflower, grated
- 4 strips bacon, chopped
- 1/3 cup onions, chopped
- 1 tablespoon butter
- 1/4 teaspoon salt, to taste 1/4 teaspoon pepper, to taste
Instructions:
1. In a medium-large nonstick skillet, cook the bacon and onion until they just start to brown. Add the cauliflower; cook and stir until the cauliflower is tender and nicely browned all over. Add a couple tablespoons of butter during cooking. This will speed up the browning and add nice flavor.
2. Season to taste with salt and pepper.
Angel Food Cake
Makes 3 servings
Ingredients:
- 1/4 cup soy flour
- 2/3 cup splenda
- 4 eggs, yolks
- 6 eggs, whites
- 1 teaspoon cream of tartar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 3 tablespoons water
Instructions:
1. Preheat oven to 300° F.
2. Spray a bundt pan with cooking spray very well.
3. Whip egg whites with cream of tartar until it peaks and becomes firm.
4. In another bowl mix the other ingredients with just enough water to form a batter. Fold batter in the egg whites then pour into pan.
5. Bake on 275° F for 1 & 1/2 hours.
