This is a twist on the classic corned beef and hash. The smokiness of the bacon creates a nice contrast with the sweetness of the potato. (You can’t go wrong with bacon!). Serve with a fried or over-easy egg on top.
Another option is to cut the sweet potatoes into larger pieces and serve as a side dish to roasted chicken. It would also pair well with some braised winter greens. Enjoy!
