
Lisa Hendey created this speedy summer recipe that's packed with colorful vegetables.
Enjoy this combination of garden-fresh vegetables and gnocchi--a simple Meatless Friday dinner that's on the table in a flash.
Summer Gnocchi
1 package (1 pound) Trader Joe's Gnocchi (or other prepared gnocchi)
1 red bell pepper, diced
1 green bell pepper, diced
1 cup mushrooms, sliced
2 Tbsp Olive Oil
Seasonings to taste
In a large pot, boil gnocchi in salted water until it floats on top of water. In a skillet, saute vegetables in olive oil until heated. Drain gnocchi and place into skillet with vegetables. Season to taste.
Serves 3-4
Cooking time: 15 minutes
