Tell us about yourself and your family

My husband and I both converted to Catholicism in our 20's. We are an eHarmony couple although I almost didn't give him a chance because he was Catholic and I was Protestant at the time! We've been married five years. We just recently moved to Boise, Idaho and we have three girls (Rose Mary, Poppy Grace and Violet Elizabeth.) Though most of  our furniture is from Craigslist or hand-me-downs, we did buy this table new from Ikea. We wanted something dark so it could be really loved by our children and something big since we enjoy hosting people in our home. It seats 14 people when it's fully extended!

At home we don't eat much gluten, refined sugar or dairy. That is to say we're a mostly meat and veggies kind of family! We don't have a lot of rituals around dinnertime yet since Rose is only 4 but we're hoping it becomes a more important and special part of our day as the kids get older! My husband brews his own beer and cider. This time of year, we have a cinnamon apple cider that is amazing!

Here is one of our favorite Fall time recipes. We often make this for ourselves or for other families who just need some kindness in their life.

Share your family's favorite recipe:

Pumpkin Bread small

Sterling's Gluten-Free Pumpkin Bread
2.5 cups almond flour
1 cup canned pumpkin
1/3 cup coconut oil, melted
8 eggs
4 tsp almond butter
1/2-1 cup of honey (depending on how sweet you want it)
1 tbsp cinnamon
2-3 tbsp pumpkin pie spice (depending on how "spicy" you want it)
2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
Preheat over to 325 degrees. Spray a 13x9 inch baking dish. I use the coconut oil spray from Trader Joes but you can use butter or Pam!
I'm a lazy baker so I really only make things where the instructions are "pour everything into a bowl, mix well, pour into baking pan and bake." So do that ;o)
Pour into the baking dish and bake for 35-45 minutes. If you like it a little more spongy and wet, keep it at 35 minutes. If you like it a little more dry and firm, target 45 minutes.

How does your book/blog/project help "feed" people spiritually?

As a convert, I got to choose to fall in love with Catholicism and I fell hard! The more I eat at our Lord's table, the more I want to share this nourishment with others. Our faith is so rich and beautiful and filled with traditions. I call them tools. I like to help teach people to sharpen those tools. I especially share these ideas with Catholic moms who are struggling to prioritize their lives and find peace. Instead of letting the day run them over, I try to help them find peace through prayer, planning and pruning out things that aren't important!

Share a Fun Fact about yourself or your family:

I have a degree in finance but after college I decided to be a dog trainer. I thought, "My dream job would be to get to play with puppies all day!" I ran a puppy academy out of my home for two years and although I fell in love with each and every fluff ball that came through my program... it turns out... it's mostly cleaning up poop and teaching the same five dog tricks over and over ;) Not quite the dream I had imagined.

So if you want any advice about your dog, shoot me an email. In the meantime, I use the same principles of positive reinforcement to train my children!

Share your family's favorite grace before meals prayer:

We rotate between three prayers so I can't say there's a favorite. One of them we sing and that is my daughter's favorite. I'm embarrassed to say I don't know that they have official names. I'll have to go research that immediately! But that's my style, never stop asking questions and never stop learning!

When you join us at our dinner table, ... you may not always enjoy the fanciest of meals but hopefully you'll have some good laughs and feel the warmth of Christ's light shining through our family!
