Gluten-free AND meatless?

Yep, you heard that one right.

I will never forget the first Lent we had after we discovered my husband's gluten allergy. You seriously would have thought he was going to shrivel up and die... every. single. Friday. Now, I am not slamming my husband (because he honestly is wonderful); I am just pointing out that for most people who don't eat gluten, meat plays a major role in their meals and it is tough to cut out.

But, as I discovered after a lot of trial and error, there are lots of ways to make delicious, healthy, simple meals that are gluten-free AND meatless ...and don't taste like sandpaper. And since my husband is still alive and thriving, I think it must be working!

Whether you are gluten-free or not, I hope you find Fiesta Rice a quick and easy option this Lent! From quesadillas to nachos to eating it all by itself, this dish does it all.

Fiesta Rice

2 cups Rice, uncooked
2 Tbl. Coconut Oil, divided
1 Pepper (any color), julienned
1/4 cup Onion, diced
1 & 1/2 cup Black Beans (or 1 can)
1/3 cup Cilantro, minced
1 tsp. Fresh Garlic or 1/2 tsp. Dried Garlic
1 tsp. lime juice (optional, but delicious)
Optional garnishes- avacado, cheese, sour cream, diced tomatoes, green onions, etc.

Cook the rice according to package directions. Saute prepared peppers and onion in 1 Tablespoon of the coconut oil; set aside. When the rice is done, fry it in a large frying pan or skillet for 2-3 minutes with the rest of the coconut oil. Add the saute mix, black beans, cilantro, garlic, & lime juice and heat briefly. Serve it up on tacos, quesadillas, nachos or eat it just by itself.
