Ground Nut Stew from Sierra Leone
Makes 4–6 servings- 2 T fair trade olive oil
- 1 onion, chopped
- 1 clove garlic, minced
- 1 red pepper, chopped
- 4 tomatoes, diced
- 2 carrots, chopped
- 1 chili pepper, diced
- 2 t salt
- ½ t ground cumin
- ¼ t black pepper
- 3 cups water or vegetable broth, plus more as needed
- ½ c creamy peanut butter
- 2 cups white rice
