Our friends at Mary Help of Christians Academy in North Haledon, New Jersey, share recipes created in their Culinary Arts program on their blog, Our Daily Bread. This recipe is printed here with permission from MHCA Culinary Arts teacher Frank LaMendola. During the Lenten season, meatless Fridays can be a challenge, but you don't have to turn to the same boring fish dinner each week.

Vegetarian Chili

Ingredients:
2 cups canned crushed tomatoes
1 tablespoon chicken stock
2 jalapenos
1/4 cup chili powder
1 tablespoon brown sugar
1 tablespoon salt
2 cans dark red kidney beans, drained
1 tablespoon canola oil
1 cup red onion
1 cup green pepper
2 cloves garlic

Toppings:
Cheddar cheese
Cilantro
Tortilla chips
Finely chopped garlic
Chopped pepper
Chopped onion
Thinly sliced jalapenos

Directions: Heat canola oil over high heat. Add onion, pepper, jalapenos, and garlic. Cook over medium heat about five minutes. Stir in chili powder, and cook one minute. Stir in tomatoes, broth, sugar, and salt. Reduce heat to low; cover and simmer, stirring often about 10 minutes Stir in beans, cook about 5 minutes. Uncover for the last 5 minutes of cooking. Serve with tortilla chips.
