Vegetarian Chili

Ingredients: 2 cups canned crushed tomatoes 1 tablespoon chicken stock 2 jalapenos 1/4 cup chili powder 1 tablespoon brown sugar 1 tablespoon salt 2 cans dark red kidney beans, drained 1 tablespoon canola oil 1 cup red onion 1 cup green pepper 2 cloves garlic Toppings: Cheddar cheese Cilantro Tortilla chips Finely chopped garlic Chopped pepper Chopped onion Thinly sliced jalapenos "Meatless Friday" Vegetarian Chili" (CatholicMom.com) Copyright 2020 Mary Help of Christians Academy Culinary Arts. All rights reserved. Used with permission.[/caption] Directions: Heat canola oil over high heat. Add onion, pepper, jalapenos, and garlic. Cook over medium heat about five minutes. Stir in chili powder, and cook one minute. Stir in tomatoes, broth, sugar, and salt. Reduce heat to low; cover and simmer, stirring often about 10 minutes Stir in beans, cook about 5 minutes. Uncover for the last 5 minutes of cooking. Serve with tortilla chips.
