This Sunday, plan to enjoy a special breakfast in honor of the Solemnity of Christ the King, with this recipe from The Catholic Kids' Cookbook from Word On Fire.


Each November, the Church celebrates the Feast of Christ the King. This feast day reminds us that no matter what country or culture we come from, we are all united under the rule of Jesus Christ. He is the King of the entire universe. This is an important feast day because it reminds us to practice our faith in public, not just at home!  

For this feast day, celebrate by making these Christ the King breakfast crowns. These delectable one-bite breakfast foods are meant to be shared, so think about how you can bring this meal and the message of the day to the poor and vulnerable of your community.

Christ the King Breakfast Crowns

Serves: 6  

Preparation:  1 hour  

Ingredients: 

12 slices of bacon
1–2 cups frozen hashbrowns
Garlic salt
12 slices of bread
1 dozen eggs
¾ cup milk
Salt
Pepper
1 cup shredded cheddar cheese 

Supplies:  

Muffin tin
Drinking glass
Pan  

 Directions:

  1. Thoroughly grease a muffin tin. (The egg will cling to any spots that haven’t been greased.) 
  2. Heat a pan on the stove over medium heat and cook the bacon (until cooked but not crisp). 
  3. Remove the bacon and set aside. Cook the hashbrowns in the remaining bacon grease and season with garlic salt. Wait until the hashbrowns are cooked but not crisp, then set them on paper towel to drain the grease. 
  4. Using a glass, cut circles out of the pieces of bread about the size of the muffin tin base. 
  5. Preheat the oven to 375°F. 
  6. Place the circles of bread in the center of each muffin tin. 
  7. Wrap 1 piece of bacon around the sides of the muffin tin and layer hashbrowns on top of the bread. 
  8. In a bowl, whisk together the eggs and milk and season with salt and pepper. 
  9. Pour the egg mixture into each muffin tin. 
  10. Sprinkle cheddar cheese over each egg. 
  11. Place the muffin tin in the oven and bake for 25 minutes. Let cool for 5 minutes and enjoy!
