I love the mix of refreshing, sweet, and savory flavors in this Black Bean and Mango salad. Although you can make it with as few as five ingredients, each ingredient adds a different dimension to the flavor. Don’t be scared, though; only the flavor is complex. The preparation is simple and requires very little effort, especially if you use thawed frozen mango and canned black beans.
Black Bean and Mango Salad
Ingredients:
- 2 cans (15 oz) black beans, rinsed and drained [or 3 cups black beans cooked from dry beans]
- 2 cups frozen mango chunks, thawed [or 2 chopped fresh mangos]
- 2 tablespoons chopped fresh cilantro, or more to taste
- 1-2 cups chopped crunchy vegetables, such as celery, cucumber, and/or bell peppers (optional)
- 2 tablespoons lime juice
- Salt and pepper to taste
Directions:
Place all the ingredients in a large bowl with a lid and stir until evenly mixed. Cover and chill for at least 10 minutes before serving.
