For Meatless Friday, Karen Ullo serves up a recipe for a pasta dish that can be served hot or cold. Download our printable recipe card!

This easy pasta salad can be served meatless, with shrimp, or, when it’s not Friday, with grilled chicken. Serve hot or cold, though I prefer it cold.

Caprese-Inspired Pasta Salad 


For the sauce: 

2 T olive oil 
1 clove garlic, chopped 
Juice and zest of 1 or 2 lemons 
½ tsp. Italian seasoning 
¼ cup white wine 
Salt to taste 

In a saucepan, heat olive oil and then add garlic.
Sauté until just brown, then add remaining ingredients.
Simmer until the pasta is done, stirring occasionally.

For the salad: 

1 lb. rotini pasta, prepared according to package directions 
Grape tomatoes, whole or halved
Mozzarella pearls 
Kalamata olives, whole or halved 
¼ cup chopped basil  

Once the pasta is ready, combine pasta, sauce, and salad ingredients in a large bowl and toss. Refrigerate until ready to serve. 

Garnish with additional basil and/or Parmesan cheese, if desired.
