At our house we use a lot of egg yolks in our daily smoothies for added protein, which means we are left with lots of egg whites. I hate wasting food, so I was experimenting with a quiche and this turned out to be a keeper! Bonus: this recipe is gluten-free.
This is a great no-meat recipe, but also is yummy with added bacon or shredded chicken for other occasions. Also try various kinds of cheeses for completely different flavors; it’s super versatile!

½ c chopped yellow onion
½ c chopped green pepper
1 garlic clove, minced
½ c whole milk or heavy cream
¾ c shredded mozzarella
1 c chopped tomatoes
1 ½ c liquid egg whites
Salt & Pepper
Brown onion, green pepper, and garlic together until onion begins to soften.
In a bowl, whisk egg whites, milk, cheese, salt, and pepper.
Place onion mixture into the bottom of a greased pie plate, evenly pouring egg mixture on top.
Spread chopped tomatoes over the top of the quiche before baking.
Bake 350 for 45-50 min or until the egg is fully cooked. Of course, baking times vary with ovens!
Serve with fresh fruit or green salad.
