Christy Wilkens shares a Meatless Friday recipe that can be made on a single sheet pan.
Gnocchi with Pesto and Veggies
1 package fresh gnocchi (you can use gluten-free gnocchi in this recipe)
1/2 jar pesto (plus more for serving)
1 can chickpeas, drained
Vegetables of your choice
Preheat oven to 425. Toss all ingredients together. Cover a sheet pan with foil. Dump all ingredients on the sheet pan.
Roast 15 minutes, stir, roast 15 more minutes.
Add more pesto and serve.
