Tilapia is a terrific fish to serve on a busy day because it cooks in no time at all, and you can get bags of individually wrapped portions to keep in the freezer. The portions defrost quickly, too! Best of all, it has a very mild flavor so you can season it any way you like, and the fish won't get in the way of the seasoning.

My most recent experiment with tilapia involved using a Greek salad dressing I found at the supermarket. (It's great on salad, too.) Two ingredients and your main dish is done! Get your side dishes going before you even start the fish, because this cooks in less than 10 minutes.

Greek Baked Tilapia

Makes 4 servings

Ingredients:

4 individual portions of tilapia, defrosted
1/4 cup Greek salad dressing

(NOTE: if you like extra spice, add a little garlic powder, oregano, and black pepper to each fillet)

 

Directions:

1. Prepare baking sheet with foil for easy cleanup. Spray with baking spray or brush with a little olive oil. Preheat the oven to 400°F.

2. Place tilapia portions on prepared baking sheet.

3. Drizzle salad dressing over the fish and spread with a pastry brush to coat completely.

4. Bake 7 to 10 minutes (checking after 7) until fish is done.
