This is one of my husband’s favorite dishes, and it’s about as easy as home cooking can possibly be.
Pesto Salmon
Ingredients
1 portion salmon fillet per person
½ cup white wine
Juice of 1 lemon
Salt to taste
1 jar store-bought pesto sauce (or make your own!)
Grated Parmesan cheese
Directions
Preheat oven to 400. Put the salmon in a baking dish. Pour in wine and lemon juice. Sprinkle with a touch of salt. Bake at 400 for about 15-20 minutes until the flesh flakes easily with a fork.
In a small microwave safe bowl, heat the sauce until just warm, about 15 to 20 seconds. Spoon about 1 tsp. onto each fillet and spread. Garnish with grated Parmesan.
