Italian Pancake Dunkers
Makes 8 servings
1 cup pizza or spaghetti sauce
2 cups Original Bisquick® mix
1 cup milk
2 eggs
1/2 cup shredded mozzarella cheese (2 ounces)
1/2 cup finely chopped pepperoni
1/4 cup finely chopped green bell peppers
2 tablespoons Italian seasoning
1 small tomato finely chopped (1/2 cup)
1. Heat pizza sauce until warm; keep warm. Spray griddle or 10-inch nonstick skillet with cooking spray; heat griddle to 375° or heat skillet over medium heat.
2. Stir Bisquick mix, milk and eggs in large bowl until blended. Stir in remaining ingredients. Spoon batter by tablespoonfuls onto hot griddle; spread slightly.
3. Cook pancake until dry around edges. Turn; cook other sides until golden. To serve, dunk pancakes into pizza sauce.
Serve with green salad
