Beef and Bean Burritos
Makes 10 servings
1 pound ground beef
1 medium onion, chopped
1 cup refried beans (from 16-ounce can)
1/4 cup taco sauce
1 1/2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
10 (7 or 8-inch) flour tortillas, heated
1 cup shredded lettuce
4 ounces (1 cup) shredded cheddar cheese
1 tomato, chopped
1/2 cup salsa, if desired
1. In large skillet, combine ground beef and onion; cook over medium heat for 8 to 10 minutes or until beef is thoroughly cooked, stirring frequently. Drain.
2. Stir in beans, taco sauce, chili powder, salt and pepper; mix well. Reduce heat to low; simmer 5 minutes.
3. Spoon about 1/4 cup beef mixture onto center of each tortilla. Top each with lettuce,
cheese and tomato. Fold bottom 1/3 of each tortilla over filling; fold sides in toward center, leaving top open. Serve with salsa
