Pork Tenderloin
Makes 4 servings
2 pork tenderloin ( 1/2 lb. each)
2 tablespoons white wine or sherry
2 tablespoons vegetable oil
2 tablespoons soy sauce
2 teaspoons brown sugar
1/2 teaspoon black pepper freshly ground
1/2 teaspoon ginger root grated
1 garlic small, minced
1. Trim tough white membrane from each loin.
2. In an oblong dish stir together wine or sherry, vegetable oil, soy sauce, brown sugar, pepper, ginger root and garlic. Add pork and coat with marinade. Cover and refrigerate for 2 hours, turning once.
3. Transfer pork to broiler pan rack. Broil 4 to 5 inches from heat source for 7 to 8 minutes on each side or until no longer pink in the center. Let stand for 10 minutes before slicing.
Serve with Canned Corn and Dinner Rolls
