Makes 4 servings

1 pound fresh or frozen cod filets, orange roughy fillet, or catfish fillet (approx. 1/2" thick)
1/2 cup milk
1/4 cup flour
1/3 cup dry bread crumbs
1/4 cup grated parmesan cheese
1/2 teaspoon dill weed
1/8 teaspoon pepper
2 tablespoons butter or margarine

1. Thaw fish if necessary. Cut fish into 4 serving-size pieces. Place milk in a shallow dish. Place flour in another shallow dish. In a third shallow dish combine bread crumbs, cheese, dill weed, and pepper. Toss with melted margarine.

2. Dip each piece of fish in the milk, then in the flour. Dip again in the milk, then in the crumb mixture to coat all sides. Place fish on a greased baking sheet. Bake, uncovered, in a 450 degree oven for 6 to 9 minutes or until fish flakes easily with a fork.
