I adore watermelon and when I was little I loved to sprinkle it with salt before I ate it. I also swallowed the seeds. I was told that I would probably grow a watermelon in my stomach. Well that never happened. I still do love to salt my watermelon, but now that I am older I don't sprinkle as often, now that I was told to cut back on the salt.

Perhaps I love feta so much because it is salty, and that is why these ingredients go so well together. The sweet watermelon plays well with the salty feta and the slightly tart of the kiwi. The poppy seeds adds a bit of crunch and some visual interest.

I know, when you think of a Napoleon you usually think of something sweet. Well, this is sweet and refreshing, just in a different way. This recipe works well on those warm days. I guess because it is not heavy, it is perfect for those hot days. It can also be enjoyed as an appetizer instead of dessert. The best part about this recipe is that it requires no oven or stove. No needs to heat up your house, just cut, stack, sprinkle and enjoy.

Watermelon, Feta and Kiwi Napoleons

Ingredients:

1 block Feta Cheese sliced
1/4 whole watermelon (rind removed and sliced)
4 kiwis peeled and sliced
1 tablespoon poppy seeds

Directions:

Lay a slice of feta on a plate. Top with a slice of watermelon approximately the same diameter of the feta. Add the kiwi slices in a similar pattern.

Repeat layers twice, ending with the watermelon.

Sprinkle with poppy seeds.

Serve right away.
