Mini Breakfast Quiches
Makes 12 servings
Ingredients:
- 4 ounces diced green chilies
- 2 ounces diced pimiento, drained
- 3 cups precooked white rice
- 2 egg substitute equivalents
- 1/3 cup skim milk
- 1/2 teaspoon cumin
- 1 teaspoon (dash) salt and pepper
- 1 cup low-fat cheddar cheese
Instructions:
1. Preheat the oven to 400 degrees. In a large mixing bowl, combine all ingredients except 1/2 cup of the cheese.
2. Spoon mixture evenly into muffin cups and sprinkle with remaining cheese. Bake for 12 to 15 minutes or until set. Carefully remove the quiches from the pan, arrange on a platter, and serve.
Chocolate Yummies
Makes 24 servings
Ingredients:
- 1 cup semisweet chocolate chips
- 1/3 cup butter or margarine
- 16 large marshmallows
- 2 cups quick cooking rolled oats
- 1 cup flaked coconut
- 1/2 teaspoon vanilla extract
Instructions:
1. In a saucepan over low heat, melt the chocolate chips, butter and marshmallows. Stir until smooth.
2. Stir in oats, coconut and vanilla. Mix well.
3. Drop by rounded teaspoonfuls onto waxed paper-lined baking sheets. Chill until set, about 30 minutes.
