
Pizza and movie nights are complete for Tanya Weitzel and her family with this recipe.
This pizza was even eaten by our 4-year-old son who doesn't always like spinach. But on this pizza, it was a hit. We love pizza and movie nights.
Ingredients:
1 lb whole-wheat pizza dough (store-bought or homemade)
½ cup tomato sauce
¾ cup low fat feta cheese
½ cup shredded part-skim mozzarella cheese
¼ cup shredded Asiago or Parmesan cheese
Italian seasoning
Cornmeal (or ground flaxseed) for dusting
Optional Toppings:
chopped spinach
chopped tomatoes
sliced onions
sliced black olives
sliced mushrooms
Preheat oven to 425 degrees Fahrenheit. Dust pizza stone or pan with cornmeal (12- or 14-inch round).
Roll out dough onto the surface until it covers the edges. Spoon tomato sauce over the dough and sprinkle with Italian seasoning. Layer with cheeses and optional toppings. Sprinkle with Italian seasoning again, if desired. (Our son loves seasoning). Cook for 15-20 minutes until the outside of crust is golden brown and cheese is melted.
