Grilled Ham Slice with Pineapple Salsa
Makes 6 servings
Ingredients:
PINEAPPLE SALSA
- 1 (8-ounce) can crushed pineapple, drained
- 2 tablespoons orange marmalade
- 1 tablespoon chopped fresh cilantro
- 2 teaspoons chopped fresh jalapeno chiles
- 2 teaspoons lime juice
- 1/4 teaspoon salt
HAM
- 1 (1 1/2-pound) fully cooked
- center-cut ham slice, (3/4 to 1 inch thick)
Instructions:
1. GRILL DIRECTIONS: Heat grill. In small bowl, combine all salsa ingredients; mix well.
2. When ready to grill, place ham on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 10 to 20 minutes or until thoroughly heated, turning 2 or 3 times. Serve with pineapple salsa.
TIP: To broil ham, place on broiler pan; broil 4 to 6 inches from heat using times above as a guide, turning 2 to 3 times.
Upside-Down Baked Potatoes
Makes 4 servings
Ingredients:
- 4 tablespoons margarine, melted
- 2 tablespoons grated Parmesan cheese
- 4 to 6 potatoes, cut in half lengthwise
Instructions:
1. Coat bottom of a 13" x 9" baking pan with margarine; sprinkle cheese on top. Place potatoes cut-side down in pan.
2. Bake at 400 degrees for 30 to 40 minutes.
