I love the abundance of fruit and vegetables available in the summer. Every year I make apricot preserves from local apricots from the farmer’s market.
It takes a little bit of work, but it is worth your time, I promise. You can spread it on toast, use it to accompany a cheese plate, put it in peanut butter and jelly sandwiches, the possibilities are endless.
