Beef and Bean Burritos
Makes 10 servings
Ingredients:
- 1 pound ground beef
- 1 medium onion, chopped
- 1 cup refried beans (from 16-ounce can)
- 1/4 cup taco sauce
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 10 (7 or 8-inch) flour tortillas, heated
- 1 cup shredded lettuce
- 4 ounces (1 cup) shredded cheddar cheese
- 1 tomato, chopped
- 1/2 cup salsa, if desired
Instructions:
1. In large skillet, combine ground beef and onion; cook over medium heat for 8 to 10 minutes or until beef is thoroughly cooked, stirring frequently. Drain.
2. Stir in beans, taco sauce, chili powder, salt and pepper; mix well. Reduce heat to low; simmer 5 minutes.
3. Spoon about 1/4 cup beef mixture onto center of each tortilla. Top each with lettuce, cheese and tomato. Fold bottom 1/3 of each tortilla over filling; fold sides in toward center, leaving top open. Serve with salsa.
Lemony Fruit Salad
Makes 20 servings
Ingredients:
- 1 (3-ounce) package lemon pudding mix and pie filling mix , (not instant)
- 1/2 cup sugar
- 1/4 cup water
- 2 eggs yolks
- 2 cups water
- 1 cup whipping cream, whipped
- 1 (29-ounce) can sliced peaches, drained
- 1 (20-ounce) can pineapple chunks, drained
- 1 (16-ounce) can mandarin oranges segments, drained
- 1 (16-ounce) can sliced pears, drained
Instructions:
1. In medium saucepan, combine pudding mix, sugar and 1/4 cup water. Stir in egg yolks. Add 2 cups water; mix well. Cook over medium heat until mixture comes to a full boil, stirring constantly. Cool about 45 minutes or until completely cooled, stirring occasionally.
2. Fold in whipped cream. Gently fold in drained fruits. Serve immediately, or cover and refrigerate several hours or overnight.
