Tomato Cheese Bake
Makes 8 servings
Ingredients:
- 8 slices white bread trimmed of crusts and cubed
- 1/2 pound Swiss cheese natural or sharp Cheddar cheese, shredded
- 1 16-ounce can tomatoes drained (reserve liquid)
- 5 eggs beaten
- Salt and freshly ground pepper to taste
- 2 tablespoons butter real
Instructions:
1. Heat oven to 350° F.
2. Grease an 8-inch square baking dish. Layer bread and cheese alternately ending with cheese on top.
3. Mix reserved liquid from tomatoes with beaten eggs, salt, and pepper. Pour over bread and cheese. Slice tomatoes and place on top. Dot with butter. Bake for 45 minutes.
Serve with fruit salad.
Frances’ Apple Dessert
Makes 6 servings
Ingredients:
- 5 apples tart cooking, pared and thinly sliced
- 1 cup sugar
- 2 teaspoons cinnamon ground
- 1 tablespoon butter real
- 1 egg
- 1/2 cup flour sifted
- 1 teaspoon salt
Instructions:
1. Heat oven to 375° F.
2. Place sliced apples in a buttered 8-inch square baking dish.
3. Blend 1/2 cup sugar with cinnamon and sprinkle over apples.
4. Cream remaining 1/2 cup sugar with butter; add egg, flour, and salt. Spread over apples.
5. Bake for 35 to 40 minutes.
6. Serve warm with vanilla ice cream.
