Cheesy Chicken Subs
Makes 4 servings
*If your kids do not care for mushrooms and onions (mine don't) - just serve the chicken and cheese - or add lettuce or tomato if desired
Ingredients:
- 12 ounces boneless skinless chicken breast halves cut into strips
- 1 envelope dry Italian salad dressing mix (or Caesar)
- 1 cup sliced fresh mushrooms
- 1/2 cup sliced red onions
- 1/4 cup olive oil
- 4 submarine sandwich rolls split and toasted
- 4 slices Swiss cheese
Instructions:
1. Place chicken in a bowl; sprinkle with the salad dressing mix.
2. In a skillet, sauté the mushrooms and onion in oil for 3 minutes.
3. Add the chicken and sauté for 6 minutes longer or until chicken juices run clear.
4. Spoon mixture onto roll bottoms; top with cheese.
5. Broil 4" from the heat for 4 minutes or until cheese is melted. Add Sandwich tops and serve.
Serve with Caesar Salad.
Apple Crisp
Makes 10 servings
Ingredients:
- 8 cups peeled tart apples (about 8 medium apples)
- 3/4 cup sugar
- 1/2 teaspoon cinnamon
- 1/8 teaspoon salt
TOPPING:
- 1/2 cup quick cooking oats
- 1/2 cup flour
- 1/2 cup brown sugar
- 1/4 teaspoon baking powder
- 1/8 teaspoon baking soda
- 3 tablespoons cold butter
- Vanilla ice cream optional
Instructions:
1. In a large bowl, toss the first four ingredients. Pour into a greased 8 inch square baking dish.
2. In a bowl, combine oats, flour, brown sugar, baking powder and baking soda. Cut in butter until mixture resembles coarse crumbs. Sprinkle over apple mixture.
3. Bake at 350 degrees for 55-60 minutes or until apples are tender and topping is golden.
4. Serve warm with ice cream if desired.
