This Charleston Cheese Spread is an adaptation of the southern classic pimento cheese. This version has beer, cheddar cheese, lemon, juice, and tabasco for some kick.

Charleston Cheese Spread
Total Time: 20 Min
Yields: 2 cups
Ingredients:
- 3 cups Cheddar cheese, grated
- 1/4 cup Beer, lager or ale
- 3 tbsp. Lemon juice, fresh
- 2 tbsp. Ketchup
- 2 tbsp. Worcestershire sauce
- Horseradish, prepared, drained
- 2 tbsp. Tabasco
- 1 1/2 tsp. Dry mustard
- 1 ea. Garlic clove, minced
Preparation:
Combine all ingredients in a food processor and pulse until smooth. Serve.
Notes
To make pita chips: cut pita bread into 8ths. Toss with oil and spread on a sheet tray with parchment paper. Bake at 350F for 10 to 15 min. or until golden brown. Recipe adapted from Lee Brothers Charleston Kitchen.
