Mary Lou Rosien proves that quiche doesn't have to be complicated! Here's a recipe for a simple quiche that's great for parties or family dinners.
Easy Spinach Quiche
5-6 large eggs
1/2 cup milk (or cream)
1 pkg grated Swiss cheese
1/2 tsp each pepper and salt
Prepared pie crust
Combine spinach, milk, eggs, pepper, salt. Mix well. Stir in grated Swiss cheese. Pour into crust and bake at 350 degrees till center is firm and a knife comes out clean, 30 min to 1 hour depending on oven. (Generally the quiche is done in 45 min.)
*Variation: add shrimp, or crab meat to this recipe, or leave out the creamed spinach and add grated cheddar cheese.
