Some days, it is hard to plan ahead and have a meal ready for dinner... especially when Friday just sort of sneaks up on you after a busy week!
Here is an easy recipe that you can whip up for dinner and still manage to have your kids come back for seconds. A little cinnamon, a little nutmeg and some walnuts add a delicious little twist to your everyday pancakes! Plus, sometimes it is fun to have a little breakfast for dinner (maybe followed by a pajama and movie family night?!).
The big smiles on my kid's faces is always a perk to this meal. As Mother Teresa said, "we shall never know all the good that a simple smile can do." And smiles are a good way to start or end your day!

Gluten-Free Banana Walnut Pancakes
1 1/2 Tbl. Butter, melted
1 Banana, very ripe (I usually just grab one from my freezer stockpile and thaw it.)
2 Eggs
1/2 c. plus 2 Tbl. Milk
1 Tbl Baking Powder
1 c. Rice Flour
1/4 tsp. Cinnamon
1/4 tsp. Nutmeg
1/4 c. Walnuts, chopped
Mix the melted butter and banana with a whisk until the banana has broken down. Then, add the eggs and milk and whisk again. Stir in all the other ingredients & then drop onto a hot, greased griddle. When bubble start to form on the surface, flip the pancakes. Makes 10-13 medium size pancakes.
