You're dirtying dishes now — don't dirty them another night as well. And while you're grocery shopping pick up some aluminum pans to make clean up super easy.   [!["Meatless Friday: Freezer Cheese Enchiladas" by Barbara Stein (CatholicMom.com)](https://www.catholicmom.com/hs-fs/hubfs/Imported_Blog_Media/mainimageCE.jpg?width=800&height=525&name=mainimageCE.jpg)](https://www.catholicmom.com/hubfs/Imported_Blog_Media/mainimageCE.jpg) ## Freezer Cheese Enchiladas *Double or triple ingredients as needed* ### *Ingredients* vegetable oil for frying 2 dozen corn tortillas 28-ounce can red enchilada sauce 4 cups grated jack and/or cheddar cheeses Sliced green onions, black olives, sour cream, avocado: whatever you like atop your enchiladas   ### *Directions* Grease two 9×13-inch baking dishes. Preheat the oven to 350 degrees F. In a small fry pan, heat 1 inch of frying oil. Soften the tortillas in the oil and drain on paper towels. Spread a small amount of sauce across the bottom of each baking dish. Reserve 1 cup of cheese for topping. Place a small handful of cheese down the center of each tortilla, roll and place seam side down in greased baking dish. Pour the sauce over the tops of rolled tortillas. Sprinkle the remaining cheese over top. Bake in 350F oven until heated through and cheese is melted. (If freezing, wrap, label and freeze prior to baking. To serve, defrost completely and bake.)   [![See our full list of Meatless Friday recipes](https://no-cache.hubspot.com/cta/default/275132/interactive-188493254954.png) ](https://www.catholicmom.com/hs/cta/wi/redirect?encryptedPayload=AVxigLIhVU0VF8hxoCjOCjIRPqqFUnDZSdS1bIpuUbabTBVvMaK2U6rXQHLE28hIR8XUeoJZC2CdF8Iv6Fp5T%2BfbiPh8mD7GkANNr9c1ofH6%2Bt4vyDoV%2Fx8ZUTN3bTSsJraeHaXDz9wtk556a%2BmMnr5QKoUuSPjw1Y3%2BWLvD8BVwJUOrK0El3s4PGDFcQIbJufi9%2BZcB6USXwyV3bw4B&webInteractiveContentId=188493254954&portalId=275132)   --- *Copyright 2016 Barbara Stein* *Image: copyright 2016 Barbara Stein, all rights reserved.* ### Share this article [![Share on Facebook](https://static.hubspot.com/final/img/common/icons/social/facebook-24x24.png)](http://www.facebook.com/share.php?u=https%3A%2F%2Fwww.catholicmom.com%2Farticles%2F2016%2F10%2F28%2Ffreezer-cheese-enchiladas%3Futm_medium%3Dsocial%26utm_source%3Dfacebook) [![Share on Twitter](https://static.hubspot.com/final/img/common/icons/social/twitter-24x24.png)](https://twitter.com/intent/tweet?original_referer=https%3A%2F%2Fwww.catholicmom.com%2Farticles%2F2016%2F10%2F28%2Ffreezer-cheese-enchiladas%3Futm_medium%3Dsocial%26utm_source%3Dtwitter&url=https%3A%2F%2Fwww.catholicmom.com%2Farticles%2F2016%2F10%2F28%2Ffreezer-cheese-enchiladas%3Futm_medium%3Dsocial%26utm_source%3Dtwitter&source=tweetbutton&text=Meatless%20Friday%3A%20Freezer%20Cheese%20Enchiladas) [![Share on Email](https://static.hubspot.com/final/img/common/icons/social/email-24x24.png)](mailto:?subject=Check%20out%20https%3A%2F%2Fwww.catholicmom.com%2Farticles%2F2016%2F10%2F28%2Ffreezer-cheese-enchiladas%3Futm_medium%3Dsocial%26utm_source%3Demail%20&body=Check%20out%20https%3A%2F%2Fwww.catholicmom.com%2Farticles%2F2016%2F10%2F28%2Ffreezer-cheese-enchiladas%3Futm_medium%3Dsocial%26utm_source%3Demail) ** #### About the Author ![CatholicMom Logo](https://www.catholicmom.com/hubfs/_catholicmom/logos/favicon-catholicmom.png) ### [Barbara Stein](https://www.catholicmom.com/articles/author/barbara-stein) Barbara Stein is a wife, mother, and grandmother.
