UJENI NDIWO (VEGETABLES WITH RICE)

Makes 4–5 servings 2 T fair trade olive oil 1 onion, chopped 2 t curry powder 1 ½ T fresh ginger, grated 3 medium tomatoes, chopped 1 T powdered milk 5 cups of kale or spinach, thinly cut Salt, to taste In large pan, sauté onion in oil. Add curry powder and ginger; cook for 2 minutes. Add tomatoes. Simmer for 2 minutes, then add powdered milk. Stir in the greens, cover and simmer for 5 minutes. Serve with rice.
