Karen Ullo shares a simple slow-cooked dinner: the perfect choice for a summer Solemnity.
We all love quick, tasty crock pot meals—and today is the Solemnity of the Sacred Heart, so it’s MEAT FRIDAY! Enjoy this simple way to celebrate.
Crock Pot Chicken and Oranges
INGREDIENTS
1 lb. boneless, skinless chicken thighs (or however much your crock pot holds)
¼ - ½ cup chicken broth
¼ cup soy sauce
2 oranges, sliced
Grated ginger, crushed rosemary, and garlic powder (or fresh garlic) to taste
DIRECTIONS
Place chicken in the crock pot. Pour in the broth and soy sauce, then sprinkle with spices. Lay the orange slices on top. Cook on low about 6 hours, or use high to speed it up. Layer over rice.
Enjoy!
