Monica Portogallo's family tradition of a special weekend breakfast was saved with this easy spin on a traditional favorite dish.

When I was growing up, my dad often made something special for breakfast on weekends and holidays, like pancakes or waffles. I have tried to continue this tradition with my son, but when I had a second child earlier this year, it became much harder to make a breakfast that involved measuring, mixing, and cooking things one at a time. 

This French toast saved the tradition! It takes about 2 minutes to prepare for the oven, so I could make it during a short-lived newborn nap. Plus, I didn’t need to use measuring cups and spoons because this recipe is very forgiving, so I only had 3 dishwasher-safe dishes to clean afterwards. 

As a bonus, the sweet flavor from the bread makes this French toast seem like an extra special treat (with no extra work) and makes syrup unnecessary.

Baked Cinnamon Raisin French Toast

Ingredients
1 tbsp butter or oil
3 eggs
~1/2 cup milk
1 tsp vanilla (optional)
8-10 thick slices of cinnamon raisin bread

 

Directions

Preheat oven to 350℉. Grease a 9x13 inch baking dish with oil or butter. 

In a medium-sized shallow bowl, mix eggs, milk, and vanilla together with a fork. Soak each side of the raisin bread slices in the egg mixture and place in the prepared baking dish. 

Bake in the preheated oven for about 25-30 minutes, or until firm.
