Having raised three boys with hectic schedules, I understand the need for quick, nutritious meals. I especially love meals that have ingredients that can be interchanged, are colorful, and pack a punch of flavor—meals that make your mouth water and make you happy simultaneously.  

I never imagined that by taking one egg and adding these fun options, I would end up with a gourmet meal. Have fun with this recipe by switching out your favorite veggies, cheese, spices, and meatless alternatives.

Breakfast, Lunch, or Dinner Scramble

Ingredients: 

Dairy-free butter (or butter of your choice)
One or two eggs
 
Dr. Praeger’s Spinach or Broccoli Littles  
Simply Nature Sweet Potato Bites  
Crumbled Goat Cheese: Tomato Basil flavor (The tangy flavor of this cheese is a beautiful compliment to the veggies. Experiment with your favorite)
Salt/Pepper to taste 

 
Instructions: 

Defrost the little veggie shapes in the microwave for one minute before adding them to the skillet.

Melt 1 tsp dairy-free butter on medium heat and add the defrosted veggie shapes.

Chop to desired size, and add the egg once brown. 

Scramble until done, add cheese, and enjoy.
