I tested out this recipe for cod on a day when I was home alone for dinner; my husband doesn't care for fish unless it's salmon. But since this one was billed as "poor man's lobster," I think there's a good chance he'll like this one as much as I did. If you have kids who live for the chance to dip their food, this is the fish recipe for you. There's a reason the butter comes first in the name of this recipe!

You can use fresh or frozen cod to make this dish; thicker fillets work better. If you can only get thin pieces, reduce the cooking time.

Butter Baked Cod

Makes 4 servings

Ingredients:

3/4 cup butter, melted
1 1/2 lb. cod fillets
1/2 tsp kosher salt
1/2 tsp black pepper
1/8 tsp sweet paprika

 

Directions:

Dry fish fillets with paper towels before beginning. Preheat oven to 375° F.

Brush a small amount of the melted butter on the bottom of a glass or ceramic baking dish. Place fish in the dish, and sprinkle with the salt, pepper, and paprika. Pour about half the remaining butter over top of the fish. Portion out the rest of the melted butter into small bowls for dipping.

Bake 15-20 minutes (thinner pieces of fish will take less time). Plate fish and spoon butter from the bottom of the baking dish over the cod. Serve with bowls of melted butter.
