Cilantro and Black Bean Quinoa
Ingredients
1.5 c. quinoa rinsed (makes 3 cups cooked)
1 can black beans (rinsed)
1 pt. cherry tomatoes halved
1 c. fresh cilantro chopped
2 avocados pitted, peeled and diced
Sea salt and fresh ground pepper
Juice of 2 lemons
Juice of 4 limes
Optional: extra limes for serving wedges on side
Dressing
½ c. olive oil
½ c. white vinegar
6 garlic cloves
Instructions
Cook quinoa as directed by package and cool.In a large mixing bowl, add beans, cilantro, and tomatoes. Combine
Dice avocados and mix with lemon juice.
Add all dressing ingredients into mini processor and pulse until creamy. Set in fridge.
Fluff quinoa and mix bean mixture and dressing with quinoa.
Serve with extra lime wedges. (optional).
