Sometimes you just need a simple dinner you can get on the table in less than a half hour. This Asian-inspired pasta does just that. I hope your family enjoys it as much as mine does!
Pasta with Peanut Sauce
Serves 4
Ingredients:
8 ounces uncooked pasta
1 tablespoon butter
1 small onion, chopped
1 medium bell pepper, chopped
¼ cup peanut butter
2 tablespoons finely grated Parmesan
2 teaspoons soy sauce
Salt and pepper to taste
Directions:
Bring a large pot of water to a boil. Cook the pasta until just shy of al dente, about 1 minute less than indicated by package instructions. Reserve 1 cup of the cooking water, then drain the noodles and return them to the pot with the reserved water.
Over medium-low heat, stir in butter, onions, and bell pepper to the noodles. Cook until onion starts to soften, about 2-3 minutes.
Add the peanut butter, Parmesan, and soy sauce. Stir the noodles until the sauce is smooth and clings to the noodles. Season to taste with salt and pepper.
