Don’t hide from your cucumber-laden neighbor; do this instead!
This easy recipe for cucumber, onion (and sometimes tomato) salad to the rescue! It makes a BIG salad, so have a big storage bowl ready, for a tasty salad that stores well.
Summer Cucumber Salad
Ingredients:
3 to 5 fresh, thinly sliced cucumbers
2 large, sweet onions sliced thin
1/2 cup white vinegar
One and 1/3 cup boiling water
1 cup sugar (or stevia, using equivalency information on stevia container)
1 tsp salt
1 tsp pepper
1 tsp dried dill
If your family likes tomatoes, add a few slices of those, too!
Directions:
Mix all ingredients together in a large bowl. Cover the bowl and refrigerate the salad for at least two hours before serving. (And if the salad is too tart for you, just add more sugar or stevia, and make note of that on your recipe card.)
