This simple, but delicious, recipe is a staple for our family on Fridays. It’s healthy and quick to put together after work and school, and the customization options are endless! The flavorful poblano pepper is what makes this meal special to us, but of course, you can mix this up with any type of pepper you love. This meal is also ideal to make when the weather is warm, as it does not use the oven and therefore does not heat up the kitchen. This does not apply to everyone, of course, but in our area of the Northeast, we do not have central air conditioning, and such stovetop-only meals are truly important!
Zesty Black Bean Burritos
INGREDIENTS:
- 1 tbsp. olive oil
- 1 poblano pepper, sliced into strips
- 1/2 medium yellow cooking onion, sliced or chopped
- 1 15-oz. can black beans, rinsed
- Flour tortillas, warmed
- Shredded pepper jack cheese (or cheese of your choosing. Eliminate this for a dairy-free option!)
- Sour cream (optional)
- Salsa (optional)
- Other optional toppings: diced tomatoes, avocado, sliced black olives, sliced bell or banana pepper
DIRECTIONS:
Heat olive oil in medium to large skillet.
Add peppers and onions and sauté until soft.
Add beans and heat until warmed.
Serve on warmed tortillas with cheese and/or other toppings of your choosing.
